Our Year in Review

I love the idea of a fresh start with the coming of a new year. We were so blessed in 2010 and welcome the new year with open arms. I so enjoyed looking back over the past year and what extraordinary joys happened in our life - mainly the birth of our nephew, Jack.
January: I traveled to Seattle for my sister's jewelry party and to see the girls, and an added bonus to hear the Eastman's were having a baby!

February: Brought us a visit from Sam & Deanne, plus they got engaged that weekend so loads of celebrating!

March: I celebrated Mary's Bachelorette Weekend with wine tasting and dancing. John celebrated 31 years, we brunched for Pam's birthday, and this beautiful lady turned 60 with two fun weekends in SF and Seattle.


April: I rang in my 29th year with three of my most favorite people - John, Andi and Kyle.

May: Was the month for weddings! We had back to back to back wedding weekends in Scottsdale for Mary & Reg, Boston for Tim & Steph and St. Helena for Evan & Vanessa.

June: Had a weekend filled with love and celebration with Brooke's bridal shower, Mac's baby shower, learning my best friend Courtney was going to become a mama and the birth of our nephew Jack!

July: We gave an SF farewell to our dear friends Andi & Kyle, saw the sissy off on her move to L.A., had a visit from Kelsey, I donned my cowboy boots for Steph's bachelorette weekend, spent a week in Seattle, saw Adam marry his Kristy, and we gained a new sister-in-law!

August: So many birthdays in August plus one very important new one, the birth of Miss Ellie! John headed back to Seattle for some mountain fun and glory days for Sam's bachelor party and snuggles with our nephew.


September: Was another month of milestone birthdays - Kelly and Paul came to celebrate her 30th! We headed to Seattle for Sam & Deanne's wedding and to celebrate my dad's 60th!

October: Is my busiest time of year at work but we managed to sneak some fun in exploring new restaurants with friends, a weekend with the girls and meeting Ellie in Wenatchee and the amazing weekend of Steorgetoberfest!

November: The month for being thankful! I was so thankful to be able to be there for my bestie, Courtney's baby shower. We were both so grateful for a relaxing week in Palm Springs with my family and friends.


December: We had visits from Jeff & Erica and Ian & Jade. Without a doubt my favorite time of year, sometimes I am overwhelmed with how much joy can be crammed into such a short time. What a wonderful Christmas this year filled with family, friends, seeing growing baby bumps, Jack "opening" presents, and traditions.

John and I plan to spend the New Year as our little family of three (Hobster has been missing us) - burrowed in after the holiday craziness reflecting on what a year we had and excitement for what is to come. I wish you all health, happiness and new beginnings in 2011!

Disgusted

So glad The President has time for things like this. I positively dispise Michael Vick. I truly don't understand how such good things can happen to such bad people. I believe in second chances for sure but there is something inherently evil inside a person to do what he did to those dogs. Wow, such a disappointment and bad move.
A much more merry post to come, I promise! Once I am back in SF and have uploaded pics!

Overdue update

I know we all feel December just flying by, unreal how fast is goes! I have been a very bad blogger these past few weeks so here is a quick update!
We had a fun visit with Ian & Jade in town for the weekend!

I hosted my team for a Christmas lunch. Never have I missed having a dishwasher more after 3 courses. :)

We went to John's holiday party. A huge congratulations to his company, The Outcast Agency, for being the only PR firm included in AdWeek's Agencies of the Year.

I arrived home in Seattle and got to celebrate some Christmas cheer with my girls, Kelly and Steph! Thanks for dinner Stephie, and that is her adorable kitty Mojo in the pic.

Last night, I was my mom's date for the Anderson's annual Christmas Ship cruise on the Big Kahuna. The Christmas ships are one of my favorite holiday traditions!
John lands tonight and Courty comes home tomorrow morning - can't wait!!

I was out of town for work this week on the east coast so I am just catching up with my DVR. Loved this on the Glee Christmas episode.
Ian & his girlfriend, Jade, are visiting us for the weekend. Fingers crossed I can convince the boys to go ice skating at Union Square tonight. :)

Apple Cup Weekend Redux

As soon as December weekends start, they always seem to fly back in a blur! After a rough start to it, locking my keys/purse in the trunk at Costco (thank goodness for AAA) things turned around. John went to see Roger Waters of Pink Floyd on Friday, in his words "Epic". Then Saturday, The Beckers arrived!!
We cheered loud for our Cougs! Rough loss but still so proud of them, Tuel is awesome and the future is bright or at least brighter. :) I hope Moos knows what he is doing in keeping Wulff. Even I could tell his play calls were just the worst!
To console ourselves, we drank quite a lot of these. On our way to dinner, we ran into Joe Montana dining in North Beach. John definitely said hello. :)
On Sunday, we headed to Alcatraz for my second visit but it had been a long time!

Apple Cup is here!

Our rivalry football game with the lame Washington Huskies is today, The Apple Cup! The Cougs have shown steady improvement this year and had an amazing win against Oregon State a few weeks ago! I looooove this week because it showcases what true fans The Cougs are versus the bandwagon Husky fans! UW administration gives me so much ammo to work with, it is so fun to throw some digs! Facebook is the perfect taunting tool! Win or lose, we still love our Cougs!


I so wish we were in Pullman today but The Becker's are arriving any minute so can't wait for some Erica & Jeff time for the rest of the weekend! Go Cougs!!

Big day for our alma mater

Washington State University to Announce Largest Fundraising Effort, Largest Gift in School History
Thursday, Dec. 2, 2010


In a special meeting held by teleconference in Seattle Thursday morning, the Board of Regents of Washington State University officially accepted a gift of $26 million from Paul G. Allen, the investor and philanthropist who was co-founder of Microsoft.

The gift will support the mission of the School for Global Animal Health http://globalhealth.wsu.edu/ , which is providing solutions to health challenges worldwide through detection of pathogens, control of disease transmission and vaccine development.

Special events marking the launch of the public phase of the fundraising campaign will begin at 11:30 a.m. in Pullman, Seattle, Spokane, Tri-Cities, and Vancouver, and at WSU Research and Extension Centers.

Shower Recipes

I had a couple requests for recipes from the food at Court's shower so here goes...

I am giving away some Pitchford family secret recipes today! Yes, Andi, you never did respond to that text! :) I made this soup for Court's shower and it is just delicious! The spicy candied walnuts are the perfect topping for this soup! I also made another one of my favorites Artichoke Bread - Andi's mom made this for me and I would have eaten the whole pan!

Butternut Squash & Spiced Apple Soup

Ingredients

2 tablespoons unsalted butter
1 1/2 cups sliced leeks, white parts only
1 tablespoon minced garlic
6 cups peeled and roughly diced butternut squash
3 cups peeled and roughly diced apples
2 teaspoons Toasted Spice Rub, recipe follows
6 1/2 cups chicken stock or 2 (14 1/2-ounce) cans low-sodium chicken broth mixed with 3 cups water
Sea salt, preferably gray salt
1 cup chopped Spiced Candied Walnuts, recipe follows, optional

Directions

Melt the butter in a large pot over medium heat, and cook until it turns nut brown. Add the leeks and cook until slightly softened, about 2 minutes. Add the garlic and saute briefly to release its fragrance.

Add the squash and apples, raise the heat to high, and cook, stirring, until the vegetables begin to caramelize, about 5 minutes. Stir in the Toasted Spice Rub and cook briefly to toast it, about 1 minute.

Add the stock or broth-water mixture, bring to a simmer, and partially cover. Adjust the heat to maintain a gentle simmer and cook until the squash and apples are tender, about 40 minutes.

Transfer in batches to a blender or food processor and blend until smooth (like 10 minutes...you want it silky smooth). Return to the pot, reheat to serving temperature, and season with salt (also you could finish with a little cream and butter for richness)

Divide the soup among warmed bowls and garnish each portion with some of the walnuts, if using. Serve immediately. (this makes 4, 8 oz servings so you might need to double/triple...normal serving size would be 6 oz)

Toasted Spice Rub:

1/4 cup fennel seeds
1 tablespoon coriander seeds
1 tablespoon black peppercorns
1 1/2 teaspoons crushed red pepper flakes
1/4 cup pure California chili powder (about 1-ounce)
2 tablespoons kosher salt
2 tablespoons ground cinnamon

In a small heavy pan over medium heat, combine the fennel seeds, coriander seeds, and peppercorns. When the fennel turns light brown, work quickly. Turn on the exhaust fan, add the red pepper flakes, and toss, toss, toss, always under the fan. Immediately turn the spice mixture out onto a plate to cool. Put in a blender with the chili powder, salt, and cinnamon and blend until the spices are evenly ground. If you have a small spice mill or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients.

Yield: about 1 cup

Spiced Candied Walnuts:

Peanut or canola oil
4 cups walnut halves
1 cup confectioners' sugar, sifted
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
Pinch salt, or more to taste
1/4 teaspoon freshly ground black pepper

In a large, heavy-bottomed skillet, heat about 1-inch of oil to 350 degrees F.

Bring a large pot of water to a boil. Add walnuts and blanch for 30 seconds. Drain and transfer nuts to a medium bowl. While nuts are still hot and slightly wet, add confectioners' sugar and toss to coat nuts. Stir and toss until all the sugar has melted into the nuts; if bits of unmelted sugar remain on the nuts, they will not fry properly.

Stir the nuts again before frying. Using a large slotted spoon, transfer a few nuts to the hot oil, allowing the foam to subside before adding another spoonful. (Otherwise, the oil could foam over and burn you.) Fry in small batches until the nuts are medium brown, about 45 seconds per batch; be careful not to overcook. Scatter on an unlined baking sheet to cool slightly.

In a small bowl, stir together cayenne, cinnamon, a pinch of salt, and the pepper.

While the nuts are still warm, transfer them to a bowl and sprinkle evenly with about half of the spice mix. Toss well to distribute the spices and then taste a nut. Add more spice mix, to taste, and toss well after each addition. When cool, pack in an airtight jar. They will keep at room temperature for at least 2 weeks.

Yield: 4 cups

Artichoke Bread

Ingredients:

2 jars marinated artichoke hearts (Drained and chopped)
2 tsp. flour
1/2lb. sharp cheddar cheese - shredded
4 unbeaten eggs
3 green onions - chopped
Dash of Tabasco (whatever hot sauce you prefer)
Salt & Pepper

Mix all ingredients together, well, pour into greased 8'' square pan
Bake at 350 degrees - 30 minutes
